Mom’s Delight–Norma’s Sweet Potato Pie

I met Norma outside Montgomery Alabama back in 2004 and quickly fell in love with her “Southern cooking”, her homemade cheddar biscuits were killer but nothing stood tall beside her sweet potato pie and guys you can make this tasty “Dawg Treat” for your mother this week-end.
Short crust Pie Shell ingredients – 9″ pie shell
- 2 3/4 cups flour {sifted}
- 6 tbl cold water
- 3/4 cup unsalted butter
Pie Mixture
- 3tbl flour {sifted}
- 2 eggs
- 1 cup sweet potato’s {mashed}
- 1 2/3 cups sugar
- 1 tsp vanilla
- 3/4 cup evaporated milk
- 1/2 cup unsalted butter
- 1/4 cup light corn syrup
- 1/4 tsp nutmeg
- Pinch of salt
Pie Shell
Place flour in a large bowl and cut butter into pats {1/4″} and add to the flour. Rub together by hand until mixture resembles bread crumbs. Add water 1 tbl at a time using a butter knife. When mixture starts to softly hold together stop adding water and gently shape into a ball. Shape in the pie pan and place in the refrigerator 15 minutes or until set.
Pre-heat oven to 350 degrees, in large mixing bowl mix flour and sugar. Steam sweet potato’s with skin on for 15 minutes. Peel and add to flour/sugar mixture. Add remaining ingredients and beat on medium speed until well blended.
Remove shell from refrigerator fill with pie mixture and place in oven, bake at 350 degrees for 55-60 minutes. Let cool and break out the whip topping. Enjoy! and Happy Mother’s Day to all you beautiful ladies.
